Sainsbury’s Launches First 'Vegetable Butcher' In London Store

Sainsbury’s has announced plans to open an innovative vegetable counter, initially on a trial basis, in its Wandsworth store, in south west London.

The vegetable ‘butcher’ will offer new ideas and recipes for customers in a bid to encourage healthy eating and continue to boost vegetable sales.

The new approach comes following a year on year increase in vegetable sales, including a 147% increase in avocado sales, 118% for asparagus, 40% broccoli and 30% courgettes.

Sales figures indicate that over two thirds (68%) of households in the UK are eating at least one vegetarian meal a week, and are increasingly replacing carbohydrates with vegetable side dishes.

The vegetable butcher will employ more than six alternative ways to prepare vegetables and customers can take their fresh vegetables to the ‘butcher’s’ counter to select a preparation of their choice, ie; julienne, mandolin sliced, ribbon cut or spiralised.
