Tackling Irritants With Café René

Coffee specialist Café René will be showcasing its range of innovative coffee products at SIAL, offering delicious taste and added-value benefits. This article previously appeared in ESM Issue 5 2018.

Based in Poland, Café René has long been considered one of the most innovative coffee firms in Europe, with its continued investment in state-of-the-art packing machinery and capsule development positioning it as a trusted supplier, particularly in the coffee capsule market.

Now, the company is focusing its efforts on creating more added-value features around its base ingredient – the coffee itself – ensuring that every sip is as wholesome as possible.

New Approach

What many coffee drinkers don’t know is that coffee beans contain irritants, the main culprit being 5-hydroxytryptamides, or C-5HT-type carboxylic acids.

Depending on the blend of coffee, each gram of raw coffee can contain 700-2,000 microgrammes of C-5HT, primarily located in the shell of the grains. While these substances are not harmful, they can cause gastrointestinal discomfort to some people.

Taking the initiative, and working with professors and university experts, Café René sought to reduce the C-5HT content of its coffee without significant loss of grain mass, but, most importantly, without a loss of taste or aroma.

Following a lengthy development process, the company was successful in finding a way to decrease these substances from raw coffee by as much as 50%.

Its method saw the content of C-5HT lowered to a total value below 400 microgrammes (in some cases, even 300 microgrammes) per gram of coffee, through the use of aqueous, non-toxic solutions of natural organic compounds. The process had no effect on aroma or flavour bouquet, and it did not affect the caffeine content of the grains.

At SIAL Paris 2018, Café René will be revealing how this process took place.

This is not the first added-value solution that Café René has brought to the market, with the company recently unveiling a compostable coffee capsule with added collagen, which helps to support the environment and its consumers’ well-being.

Each capsule (compatible with Nespresso® coffee machines) contains added collagen – an important substance in terms of maintaining a healthy lifestyle. Collagen can ease aches and pains caused by arthritis and osteoporosis, improve digestion, and, as it is responsible for the elasticity and density of skin, can provide anti-ageing effects and accelerate wound-healing and tissue repair.

As well as being a leader in terms of innovation, Café René works with partners right around the world, sourcing high-quality Fairtrade, organic and single-origin coffee from producer nations all around the world.

The company’s IFS and HACCP-certified roastery uses state-of-the-art roasting equipment to create the highest-quality blends, as well as unique recipes for private-label customers. Café René’s expert roast-master and in-house team have a combined experience of more than 50 years in artisanal coffee development, ensuring that the full quality and aroma are captured from every single coffee bean.
